<div style="text-align: center">ABSTRACT​</div> Fresh Rice Noodle is the traditional food of Vietnam that manufactured by Rice. This paper introduce to author two part that technology and equipment manufacturing fresh rice noodle. This system machine was applied to manufacturing Fresh Rice Noodle many place in Vietnam with productivity 500 kg per hour. Detail results of research indicated at the science project of Ministry of Science and Technology code B2007- 12- 37 and associate professor Thanh Tran Thi was team leader.

Fresh rice noodle is the daily food or festival day food and it is used very popular in many palces in Vietnam. We only use it on day. If we use again,we should process it to dry noodle. However, the quality and smell complete change. Fresh rice noodle in Vietnam was manufactured with technology different other countries that was the product of wet rice civilization. A number of fresh rice noodle in Vietnam was used increase to billion ton as weekend days and holidays. In this days amount of rice noodle was used increase twice to third times , so labor of places manufacturing rice noodle work hard. To lose customer and market, places manufacturing rice noodle should increase manufacturing. Vietnam don’t have manufacturing rice noodle company, only family has make rice noodle and the hotel five star also use this rice noodle.Manufacturing rice noodle in Vietnam is a handicraft career or development in family.It was made very complex more than other foods. To manufacturing rice noodle, we need many tools, equipments and technology.
This paper reports the technology and equipment in system machine manufacturing fresh rice noodle.


Technology to manufacturing fresh rice noodle follow directly mechamize and built on backround of the trandition system machine.The trandition process made fresh rice noodle was inquired by statistical and experimental method from oral to statiscal and experimental. From require of technology, we define and select principal working of machine and equipment at each step to design; manufacturing and fiting up.


Technology and equipment manufacturing fresh rice noodle

Rice ® Soak ® wet grind ® press to separate water ® mixing ®
Pressing create fibre ® boiling ® washing water ® handful ® product.

Soak : rice soak the water one to two day.Grinding with water.Grinding machine work same as centrifugal pan, the net cover roto machine.We supply water continuous and product is mixture with core diameter 40 mm.
Separate water and make dry mixture grind :
Because we grind rice with water, product has moisture 90 percent.Therefore,grinding product was separated water filter and press by cloth material.Moisture we need 25 to 30 percent. Equiment to press and filter is frame press use hydraulic jack Fig. 1.Lifting power is 5 to 7 ton and time 10 to 15 minute.

Mixing: Before press and create fiber,flour is mixed to increase flexible and adhesive.The process mixing is the step important make fresh rice noodle.This processing make flour combined create gluten because protein asborbent and swell.The structure of gluten include many thin layer.This layer adhesive the drop flour make them elastic and resilient.

Using equipment as Fig. 3 and Fig. 4 the process increase. Mixing equipment suitiable is row machine two axis and having tank rotating. We give more the water when mixing.Therefore, we can put the air away the combining. The time to mixing 15 to 20 minutes. After we have the product same the thick and the moisture 09 percent.

Pressing create fibre : This is the most important step of manufacturing fresh rice noodle. In 2006, Asso. Prof Thanh and coworker designed and manufactured complete pressing machine screw type.

Boiling : The purpose of boiling is creativity change protein to reduce breaking and increase hard of them. Fresh rice noodle go through the pressing machine to conveyor belt.the conveyor is put into the bucket with hot water. The water is supply heat by steam water at pressure 3 to 5 kg per cm2
Rice noodle is made ripen before it pass bucket.Therefore, the time it pass bucket 1 minute. The conveyor is made by grating with th length is 3.5 meter. The way out put of conveyor having to cut rice noodle to small section with mass 0.5 to 1 kg.

Washing water: The step make increase mechanic and physis properties as increase elastic properties and reduce adhensive and reduce the process fermenting of rice noodle after.
Handful: After washing rice noodle is packing to soild with require mass of customer.The mass determine a mount follow cuter.

Evaluate the effect of the system machine manufacturing fresh rice noodle directly mechanize and automation

Evaluate the effect of the system machine manufacturing fresh rice noodle depend on many condition.the effecting of evaluation indicate about expense investigation, cost of labor, porductivity of system machine, cost of manufacturing, safe of food, quality of product.We have the compare table:

Notes: In this the table system I is system developdirectly mechanize and automation,the system II direct semimechanize and semiautomation nad system III use handful.
The method calculate price of product: System I 100.000 vnd per labor,system II 70.000 vnd per labor and system III 50.000 vnd per labor. Expenses electric energy is 1000 vnd per kWh.
Expenses fuel (coal) is 1.800 vnd per kg.The time amortization is 10 years with system I, 5 years with system II and 3 years with system I. Expenses repair at system I is equal Expenses amortization.The system II is equal 80 percent and the system III is equal 50 percent.
DISCUSION : system machine manufacturing fresh rice noodle directly mechanize and automation give us effect high economic, good product, safe food and low cost. System machine manufacturing fresh rice noodle directly mechanize and automation has productivity suitable 20.000 to 50.000 people.Results of research technology and equipment indicate that we can design system machine by method similar with productivity 100 to 1.000 kg per hour depend on people region.We can design and fit up the system machine at hotel or restaurant with productivity is 10 to 100 kg per hour that high quility and safe food and equipment need as grinder,mixer, and pressing machine.
System machine manufacturing fresh rice noodle directly mechanize and automation give us effect high economic, good product, safe food and low cost.we have many type of system suitable many place as hotel, restaurant etc .
Rice noodle is the product of agriculture wet rice. Rice noodle is the daily food and we use it less than two days.We can’t preservate it in long time and transport far. Therefore, this system machine popular may places.
